Curry Beef Stuffed Sweet Potato

Method

STEP 1

Wash the sweet potatoes until they are very clean and free from all dirt. Then prick all over with a fork.

STEP 2

With a pastry brush, apply olive oil lightly all over the sweet potatoes and sprinkle them with a pinch of salt and black pepper.

STEP 3

Place the potatoes on an oven rack and bake in the oven at 220 degrees Celsius for about 45minutes.

To make the Stuffing:

STEP 1

In a saucepan, heat olive oil slightly and add diced onions. Let it fry for a bit until transparent then add minced meat and stir.

STEP 2

Add 2-3 tablespoons curry powder and mix in thoroughly, then let fry.

STEP 3

Add the beef tenderizer. Stir and leave for about 1 minute. Now add the ground tomatoes and pepper.

STEP 4

Add one cup of water and kosher salt. Cover saucepan and lower heat. Leave to cook until beef cooks through. Now add diced carrots. Boil for about 2 minutes and then taste. Adjust seasoning by adding more salt and pepper to suit your personal preference. Add diced green pepper and stir. Remove from heat.

STEP 5

Once sweet potatoes are ready, carefully cut each into 2 equal halves longitudinally.

STEP 6

Using a knife with a sharp edge, cut around each piece of the sweet potato, leaving a space of about 1cm along the edge. Scoop out the cut potato to create a well for your filling. Then place scooped potato in a clean bowl and mash with a fork.

STEP 7

Add some of the prepared sauce to the mashed sweet potatoes. Add as much as you desire, eyeballing the proportion of potato to curry beef sauce. Mix mashed potato and sauce thoroughly and use as a filling.

STEP 8

Now scoop some of the prepared filling and put in the well created in your baked potato. Serve immediately.
