Honey Chilli Chicken

Method

STEP 1

Pour two cups of water and coconut milk into a clean pot on medium heat. Cover and leave to boil.

STEP 2

Pour in the pre-cooked Brown rice and add half of the Kosher salt. Leave to boil until the liquid dries up. Then remove from heat and set aside.

STEP 3

Heat Extra Virgin Olive oil in a saucepan and add cubed onions, stir for about 2 minutes.

STEP 4

Cut up bell peppers and add to the onions in the saucepan; stir intermittently for another 3 minutes.

STEP 5

Add grated garlic and ginger and stir until thoroughly mixed in.

STEP 6

Add all vegetables in the saucepan to the brown rice then mix in.

STEP 7

To make the honey chili sauce, combine honey, chili paste, lime juice, and soy sauce. Add pre-cooked chicken. Stir and cook for 2-3 minutes.

STEP 8

Serve honey chili chicken over brown rice and enjoy!
