Chili lemon steamed fish with honey beans and rice combo and vegdodo

Method

STEP 1

Clean fish and cut into rounds

STEP 2

Create your own steamer by bringing water to the boil in a large pot (let the water be about 1-2 inches high in the pot). You can place a bowl that can withstand heat upside down in the pot (I used the stainless steel bowl of my kitchen scale).

STEP 3

Season your fish with a bit of salt and fish seasoning and the juice of the lemon.

STEP 4

In another bowl that you will place on top the bowl in the pot, spread some sliced onion and half of the red chilli peppers. Place the fish on top, then spread the remaining chilli peppers and onion on top of the fish. Set this bowl on top of the one in the pot. Cover and steam for about 10-15mins.

STEP 5

Serve steamed fish, Vegdodo and beans and rice for a sumptuous lunch or dinner. Enjoy

To make the Vegdodo:

STEP 1

Pour 2 tablespoons of canola oil in a saucepan, add onion, stir fry until transparent.

STEP 2

Add green chilli peppers, and tomatoes, stir continuously, add a little salt or your favorite seasoning for vegetables.

STEP 3

Now add blanched shoko yokoto (lagos spinach) and stir vigorously. Add diced fried plantain.

STEP 4

Cook beans and rice combo as you like to your taste.
